Sending acknowledgments for gifts
As you enter gifts, you can decide which gifts should be acknowledged, and also set the appropriate acknowledgment templates. The first step is to set up your acknowledgment templates, within Documents.
Create acknowledgment mailing template
You need to create at least one Acknowledgment template before you can start acknowledging gifts. To do that, you can follow these instructions.
Set acknowledgment in gift
You can set the acknowledgment template to use for each gift while adding or updating a gift record:

Flag multiple gifts for acknowledgment using the Unacknowledged view in Fundraising
You can see a list of all gifts that are not set for acknowledgment from within the Fundraising tab. To do so, select the Unacknowledged view:

From there, you can quickly set a template for any gifts that you want to acknowledge, thus adding them to the acknowledgments queue.

Print a whole set of gift acknowledgments at once
When you are ready to print acknowledgment letters (at the end of the day, or week, depending on your process), you can do that all at once from the Acknowledgments view within Fundraising.
There, you will see a listing of all past acknowledgment sets, as well as the current/open set.

Acknowledgments are grouped by mailing template, and you can download and print all letters, labels, and/or envelopes directly from here:

Close the acknowledgment set
It is import to close out a set of acknowledgments each time you print and mail the letters, because that will ensure that new gifts end up in their own set:
